30 and Fabulous

So, if you ask me how old I am, I won't tell you 30, I'm likely to say 25.  But those few loyal blog followers will know the truth. 

My Birthday was great!

I'm a pretty lucky gal.  Since this was my BIG 30th birthday, 30 being my scary age, I made a list of demands rather than a wish list.  I'm allowed to do that since I am pregnant again for my birthday, and it's my scary birthday.

Here's the demands:
Cupcakes for a week
A cake with LOTS of frosting
Breakfast that is salty and sweet (this is tough since I'm pregnant and hate food)
Chinese food
The worlds largest pizza
A display of girl scout cookies that spell out 'Happy Birthday Mystie'
My toenails painted
Someone to do my hair for me
And if someone wants to get me a car I'm sure I'll find a way the accept.

I don't think this demands are that out of had, and I can explain every one of them.

Scott, being the awesome husband he is, did pretty well.  I got cupcakes for easily 3 weeks, I got some amazing cake with lots of frosting at my in-laws house the Sunday before my birthday, Scott made an amazing breakfast (pics to follow) I got a display of girl scout cookies that said 'happy', close enough, I'm getting a pedicure next week with my mom, No one has done my hair so I'm forced to do it myself (sigh), and no one thought to get me a car. As for the worlds largest pizza, I knew that was unattainable, but a girl can dream. 

 Here is my awesome breakfast, Ham and egg sandwich, and I also had orange cinnamon rolls, salty and sweet
 Since Scott had class on my birthday, he bought me my favorite pizza (not the worlds largest, but whatever) for lunch.  MMMMMM
 Rivers did not like lunch, and here is his daily meal time melt down.  I wish my kid ate....
 I decided I wanted to go to TCBY, Rivers was much happier here, and he showed me with kisses and offering me some of his frozen yogurt.

 He's saying 'cheese' which is why he looks hurt.
 Cupcakes from my favorite bakery "Sweet Tooth Fairy" Never been? you should they are amazing and yummy and worth every cent, I also got a gift card for there from Scott's sister, I'm easy to please :)
 So ignore my HUGE 23 week belly, Tucanos offers a free birthday meal if you didn't know.  Since Scott had classes for most of the day we went for dinner, and I made them sing to me.  But Rivers stole the tambourine.  It's OK, he was cute and ate a bunch of noodles and Mandarin oranges with his tongs. Ate least he ate.

I also got a 2 year old strip tease, Rivers has really been into doing "tricks" and he said to me, "watch this trick mommy!" and proceeds to remove his shirt.  I realize this is more of a career choice than a trick. But we could use the money so I won't say anything.  Please know I'm joking, I have no interest in CPS coming to my home, or any desire to see my kid naked, in fact I wish he would be more interested in potty training so I wouldn't have to see his bum so often.

My Birthday has easily gone on for a week now, and it's been fun, with cards and visits and treats and presents all week long.  I'm blessed with great family and friends. 

Until next year when I will once again turn 25 :)

Spring Break

I love when Scott has a break from School.
He works so hard.
Spring break for him was March 11-15
We had so much fun!
We had to take care of things, like getting the car fixed,
doctors appointments,
presidency meetings,
but after all was said and done, we had a blast!
Since we did have so many pressing things I took very few photos.
but I got the important stuff.
March 14 is pi(e) day.
I'm not a math nerd, but I do like to have fun with this,
we had spaghetti pie for dinner,
and s'mores pie for dessert.
Scott also made math jokes all day
we had fun.
 Also during Spring break the weather was amazing!!
We went for walks,
pulled weeds from our garden,
played outside,
went to the park.
It was a dream.
Monday morning Scott packed up and went back to school,
I miss him
So does Rivers.
I'm realizing this is the last fun week we will likely get before the new baby gets here.
After school is out Scott will (hopefully) start his internship,
then the baby will come.
So I'm glad that University of Utah has a spring break.
Those poor BYU students don't know what they're missing...

Luck of the Irish

I love to celebrate holidays
St. Patrick's day being one of them.
We had a lot of fun this year.
St. Patrick's day fell on that very last day of spring break for Scott
I was sad because we had so much fun with him.
Here are a few highlights from our holiday.
 Rivers got these fun window clings from my mom.
I had some just like this already that were on
our front door. 
He has had so much fun with them
He moved them from the fridge, to the oven door, to the hallway mirror,
to the wall, to mommy's feet, to mommy's arm.
They were a lot of fun!
 I also this year have been terrible at making cookies,
so I splurged and bought a few from Sweet tooth Fairy.
Rivers picked them out.
But he hates frosting and wouldn't eat
them unless
I scrapped the frosting off.
I think he was switched at birth.
After Sunday dinner we got this awesome cake and mint Ice cream,
it was yummy.
For 2 Sundays in a row we had corn beef and potatoes, because cabbage is yucky.
It was a standard in my home growing up
My family goes all out for St Patricks day, and there is even a party
that Sadly I missed this year, but I've heard rumors that
we will be getting together again in
a few weeks when Chuck comes to town, I hope so
Scott's mom is so great! We suggested she try making
corn beef, and she totally did!
It was something she was unfamiliar with, and she did a great job.
Well may the Luck of the Irish be with you!

Meatless Mondays

Back over last summer Scott and I decided to try something called
Meatless Monday.
We had an awesome garden, and since I was a vegetarian
for 7 years I have little to no experience cooking meat.
Since getting pregnant and always feeling gross I haven't cooked much.
We have lived off frozen meals, and take out.
Since I'm feeling good over these last few days
I have decided to cook!
This is what I am making tonight
Loaded veggie baked ziti.
This was one of my favorite meals I found
Scott and I both feel that meat is taking over meal time for our family
I am completely fine not eating meat, most of the time
meat is gross and full of chemicals and hormones.
But, it still tastes good, and I am human
so I have weaknesses.
This recipe is so yummy and pretty healthy based on what type of
pasta and cheese you use. 
I usually just grab what I have on hand.
I'm sure you are all dying for the recipe, so I'll be kind and share.
That's how giving I am.

Note:  This is the Original recipe as I found it, this is only 1-2 servings
I totally add more of everything except the tomatoes
Loaded veggie baked ziti:
2/3 cup uncooked ziti (whole wheat is good, but of course white is yummier)
1 14 ounce can tomatoes (I grab diced).  Reserve 1/2 cup of the juice.
1/2 cups sliced carrots
1 cup chopped broccoli
1/2 cup diced green bell peppers
1/4 cup sliced mushrooms
2 garlic cloves minced (I always add more!!)
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon ground black pepper
1/2 cup mozzarella cheese (reduced fat if ya wanna be healthier)
1/2 cup Parmesan cheese
Preheat oven to 375 F. Lightly coat a baking dish with cooking spray
Fill a medium to large pot 3/4 full with water and bring to boil.  Add pasta and cook until dente (tender) 10-12 minutes, or according to directions on package. Drain the pasta thoroughly.
in a nonstick pan, over medium heat add reserved juice from tomatoes.  Stir in carrots, broccoli and green pepper.  Saute 5 minutes until tender.  Add the mushrooms and garlic, cook for another 5 minutes.
Add the tomatoes, basil, oregano and black pepper to the veggie mix, cook for 3-5 minutes.
Transfer this to a large bowl, add cooked pasta and Mozzarella cheese.
Toss gently to mix and spoon into baking dish.  Sprinkle with parm cheese.  Cover with foil and bake until mixture is hot and bubbly, about 30 minutes.  Remove foil after 15 minutes and cook uncovered.
Serve immediately.
So good, so yummy, so comforting and really not to hard.
Totally easy too!!
You should all try this and let me know what you think.
I usually serve this with a mixed grain bread and sliced strawberries and bananas so that it's a "complete" meal.

Baby #2

March 1, 2013 We got to go see our new little bundle of joy.
 It clearly was an evil alien from first glance
 But it was a little BOY!!!
And we are thrilled.  There was so much stress that day.
I was so excited I think I made myself sick,
then I got a message from the hospital telling me they needed to reschedule,
then I called them back.
After being on hold for 20 minutes I finally got through and they informed
me that one of their machines was broken, but that I could still come in
so I did. Then Right before we dropped Rivers off at the Neighbors,
He fell, bite is tongue, and got a huge bruise on his arm,
and I couldn't find any clean clothes.
My stress level was high.
I had to wait over an hour to go in, by this point baby was asleep.
So, they couldn't get clear shots of what they needed
plus I hadn't eaten for a while.
They could hear his heart beat, but couldn't get any clear pictures, so I have to go back April 1.
They (ulstrasound tech and staff doctor), told me not worry,
but of course I am.
I'm having trouble just thinking if they could see the heart, and hear the heart isn't that enough?
Guess not.
So everyday when I feel him move I sigh relief that at least he's still alive.
 I'm not upset if there is anything wrong, more worried about the quality of
life my little man could have.
Having a "healthy" baby was never really my concern.
Hear me out here, I was always fine if my babies had diabilities or developmental set backs,
Babies are a miracle in any form.
I always just wanted a baby that was "alive"
So my concerns now are for his aliveness.
So as long as his little heart is beating, I'm perfectly happy.
 I already love him so very much'

19.5  weeks, still sick, but feeling more human.
I still throw up often and can't sleep
Rivers is so sweet.
When I tell him
"Mommy is sick" He replies,
"Mommy I sing the ABC's song and you feel better?"
and then proceedes to sing for me.
I wish it was that easy,but I love his sweet little spirit for wanting his mommy to feel better.

I'm so grateful that I'll get two sweet little boys

I definatly see a family resemblance.
Half way there to meet the newest man in my life.
